I don’t know about you, but when on a wellness journey, the number one principle that I am concerned with is what am I am going to eat. I’m sure that’s true for you as well. It’s almost as if, as soon as you start, immediately you find yourself standing in front of a refrigerator confused. You are confused because you don’t want to consume anything that might be detrimental to your wellness goals and you never know what to eat!!!!
First things first, when on a wellness journey, for weight loss it’s 80% what you eat and 20% physical activity that yields the best results. For me, I need to enjoy what I am eating. I don’t need to be convinced that it’s flavorful it needs to be flavorful!
So with that said, feast your eyes on this low carb delight…Cabbage Lasagna. Now so the carbs on a wellness journey is a situation because we love our GOOD PASTA! By Good I mean your mommas Mac and Cheese, that good ole hearty seasoned Lasagna, Spaghetti with that scrumptious meat sauce Gaaah I can go on and on! We just love it all. But that type of carb don’t love us!
With that said, I was excited when I found this recipe from Delish for CABBAGE LASAGNA! It mirrored everything I needed in Lasagna, the taste and texture of pasta lasagna. One step that I’d like to add to the recipe is to parboil the cabbage a little to ensure its tenderness so that knife can cut right through to the deliciousness! Enjoy!
