Guilty Pleasure Meal Deals: Shrimp Boil Avocado Tomato Cucumber Salad

All I have to say is, this IS the Meal Deal that you can definitely have NO issues with!!!!!  When I say Oh My Goodness, I mean, Owa My Goodness.  This Shrimp Boil Avocado Tomato Cucumber Salad is absolutely amazing.  So much so that I made it 3 days in a row. It is low carb, high in protein, loaded in antioxidants and has good fat.  One day I wanted something different to eat. I had been eating leafy salad all week and was just tired of having that but I did want to make sure I got my daily veggie intake. 

I remembered I had shrimp in the freezer and what better to pair with that then a nice fresh, bright cucumber tomato mixture.  But I leveled that up with the Avocado!  I didn’t want plain shrimp, I wanted it to have a great sauce so I thought of a potential shrimp boil mixture.  The two became one and I was in heaven!  How beautiful is this dish.  You need to run, not walk to your grocery store, get your ingredients and make this today.  I hope you enjoy!   • One Avocado
  • One Large Cucumber
  • One Roma Tomato
  • Juice of 1 lemon
  • 1/2 cup of Cilantro

Dice tomato, cucumber and avocado and place in medium size bowl.  Juice the lemon and pour into mixture.  Finely chop the Cilantro and also place in bowl.  Toss mixture with a spoon and put to the side. 

Shrimp Boil

  • 2lbs of Shrimp

  • About 1.2 tablespoons of Paprika
  • 1 heaping tablespoon of chopped garlic
  • About 1.2 tablespoons of Lemon Pepper
  • About 1.2 tablespoons of Old Bay Seasoning
  • Juice of 1 lemon

In a small sauce pot, melt butter.  Mix all dry ingredients in a bowl. When butter is melted add the juice of the lemon and all dry ingredients.  Let mixture boil. Stir while mixture is boiling to prevent from sticking to sauce pan.  Saute Shrimp in large skillet.  Once Shrimp is pink pour butter mixture onto shrimp and stir until shrimp is fully coated.  Plate and enjoy.
